Yerba Mate is a popular herbal beverage from South America. It is a traditional drink with a long history, including being used by the Gauchos (cowboys) of Argentina. Although it is herbal, it does contain caffeine.
Grown under shade in the gardens of Wazuka Valley, south of Uji, Jobetsugi comes from a region that has made matcha for centuries. The leaves are picked in the first spring harvest, when the savory umami in the cup is at its peak, then air-dried into the raw leaf called tencha. Stone mills grind that Tencha to powder slowly, stone turning against stone, and a single small tin takes close to two hours. What remains is a fine, brilliant-green powder, meant to be whisked into a bowl, not steeped in a pot.
We call this tea Japanese Sencha because not all Sencha on the market are from Japan. Our Sencha is a very fine one from the central Shizuoka province and can be found in many homes in Tokyo. It is a pleasant and approachable green tea, a fine choice for everyday, in the way our founder, John Harney, always began his mornings with this cup.

This is an excellent matcha. It is a blend from Joyo, just south of Uji, Japan, and surrounding areas. It is considered a thick matcha, meaning it has sufficient umami that provides sweetness and mouth-filling flavors, allowing one to add more to create a texture similar to thick mud. That is appreciated in traditional Japanese tea ceremonies.
Orange Pekoe is a classic, satisfying blend of strong Assam and smooth-liquor Ceylon. A traditional staple in many households, John Harney always drank this tea whenever he needed a mellow, comforting cup. This is made from small, broken (BOP) teas in the British tradition. Organic Sencha is the real deal. We were happy to find a nice-tasting green tea that was truly organic and truly a Sencha. We are big fans of Matsuda and his Sencha. When we learned that this tea was from the same valley, Wazuka, we were very excited. Organic teas are very important to some tea drinkers. However, finding Japanese-produced organic teas can sometimes be challenging. Teamakers often feel that they can't make good tea without adding nitrogen. Nitrogen is present in every amino acid, including those in your body. Amino acids give Sencha their body, or umami, and they also add sweetness to the brew. However, the makers of this tea get by with natural fertilizers. Yes, the tea is a bit weaker than other Senchas, but is still very nice.
Assam is India's tea powerhouse, a subtropical region straddling the Brahmaputra River where the hot, humid conditions produce some of the world's most full-bodied black teas. Organic gardens are rare here. The climate that makes Assam so productive also makes it ideal for insects, and most estates rely on conventional methods to manage them. This estate, on the northern side of the river, takes a different path. The result is a tea that trades some of the briskness of a traditional Assam for a gentler, more nuanced cup. The full leaf provides substantial heft and a medium body, while a limited number of golden tips lend a natural honey sweetness. It's a wonderful alternative to coffee, rich enough to stand up to milk and sugar but equally rewarding on its own.

Matcha is a much beloved green tea in Japan, yet it can seem intense to the uninitiated westerner. As an alternative, we suggest Matcha iri Genmaicha, the best of both worlds. The Bancha ("cha") leaves and brown rice ("genmai") that comprise Genmaicha are coated with Matcha green tea powder, and the result is fantastic!
Please brew it for 3 minutes with 175º water. The cooler water makes sure matcha does not get too strong, yet you need 3 minutes to get the nutty flavor from the genmai (brown rice).
